type='text'>Sonja Bailey's Antioch Vegetable Soup</title><content type='html'>&lt;span style="font-size:130%;"&gt;&lt;strong&gt;Antioch Vegetable Soup&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;From the Kitchen of Sonja Bailey&lt;br /&gt;&lt;br /&gt;1 lb. Hamburger, browned (or your favorite cut of beef)&lt;br /&gt;6 large potatoes cubed&lt;br /&gt;1 c. okra chapped (can add more to your taste)&lt;br /&gt;1 can English peas (can use frozen peas)&lt;br /&gt;1 c. lima beans (frozen)&lt;br /&gt;2 Quarts tomatoes mashed or tomato juice&lt;br /&gt;3-6 carrots, sliced&lt;br /&gt;3-4 stalks of celery (chopped)&lt;br /&gt;2 onions chopped&lt;br /&gt;2 cans whole kernel corn&lt;br /&gt;2 heaping Tbsp. sugar&lt;br /&gt;1 c. Acine De Pepe (tiny pasta) can add more or less to your taste&lt;br /&gt;Add 1 c. of any other of your favorite vegetable&lt;br /&gt;&lt;br /&gt;Cook potatoes, onions, okra and carrots covered in water until tender.&lt;br /&gt;Add remaining ingredients except pasta, salt and pepper to taste. Add pasta 1 hour before serving. Drain off fat. Combine 3 tablespoons flour, salt, thyme, and pepper. Toss with browned meat to coat. Place carrots, potatoes, onion, celery, and apple in crockery cooker. Place meat atop. Combine apple cider and vinegar. Pour over meat. Cover; cook on low-heat setting for 10 to 12 hours. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:verdana;"&gt;Turn cooker to high-heat setting. Blend cold water into ¼ cup flour; stir into stew. I add a squirt of browning sauce and stir. Cover; cook until thickened, about 15 minutes. (Campbells is the best!). Flatten the beef and soup mixture and put 3 cups cheddar over it, then a package of tater tots in one layer over it. Add the chicken broth and chopped potatoes and simmer for at least an hour. After that, cut up the cheese and add it to the mixture. Add ½ milk and ½ flour.  Mix together.  Then add balance of ingredients.  Pour into greased and floured cake pan.  It’s best if you use a pan that’s approximately 10 ½ x 16.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;u&gt;&lt;span style="color:#660000;"&gt;Crumb Ingredients:&lt;/span&gt;&lt;/u&gt;&lt;/strong&gt;&lt;br /&gt;3 ½ cups flour&lt;br /&gt;1 ½ cups of sugar&lt;br /&gt;8 tsp cinnamon&lt;br /&gt;3 sticks of melted margarine&lt;br /&gt;&lt;br /&gt;Powdered sugar, to sprinkle on top after cooled&lt;br /&gt;&lt;br /&gt;&lt;span style="color:#660000;"&gt;&lt;strong&gt;&lt;u&gt;Crumb Preparation:&lt;/u&gt;&lt;/strong&gt;&lt;br /&gt;&lt;/span&gt;Combine dry ingredients and then slowly add melted margarine.  Blend with fork as you form crumbs.  The crumbs should not be too wet or too dry. But, I discovered that I need to learn how to take better pictures of food because the pictures that I took don't make the food look as good as it taste. I looked at a couple of websites with ideas, so I'll see if the hints they gave on the websites help at all. Pour into greased 13x9 inch pan. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Mix together ricotta cheese, 4 eggs, sugar and vanilla with beater. I don't really like to cook</title><content type='html'>I have a confession. I'm not really a very good cook, and I don't really even like cooking. But, I'm tired of eating the same meals and am tired of spending lots of money to eat out. So, I'm going to try really hard to start cooking more at home... which means cooking at home is inevitable.&lt;br /&gt;&lt;br /&gt;One of the things that I dread is the constant trips to the grocery store in order to buy all the ingredients for different recipes. I wish that one of the online grocers would have been successful so I could have just placed the order online instead.&lt;br /&gt;&lt;br /&gt;I didn't have time to look through the recipes today to generate a grocery list for this week, but am planning to do so tomorrow.&lt;br /&gt;&lt;br /&gt;Tonight I tried &lt;a href="http://simplygoodrecipes.blogspot.com/2005/10/aunt-kathys-chicken-with-rice.html"&gt;Aunt Kathy's Chicken with Rice&lt;/a&gt;. I stuck it in the oven before leaving for church, so I lowered the oven temperature a little bit. Everyone seemed to like it, but to me the rice was a little crunchy, so I think that lowering the temperature messed it up a little bit. Next time I cook it, I will stick to the directions and I'm sure it will taste much better. Can Del Monte Diced Tomatoes with Basil, Garlic &amp; Oregano, undrained&lt;br /&gt;1 - 15 oz. Can Canellini Beans, drained&lt;br /&gt;1/2 t. Crushed Red Pepper (optional)&lt;br /&gt;2 T. Grated Parmesan Cheese&lt;br /&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-family:verdana;"&gt;&lt;/span&gt;&lt;span style="font-family:verdana;"&gt;In heavy 4 quart pan, heat olive oil. Brown sausage link pieces and chicken pieces until no longer pink. Add onion and garlic and stir fry until softened. Add spinach, chicken broth, diced tomatoes, beans, and red pepper. Heat to a boil and simmer for 15-20 minutes. Ladle into bowls. Sprinkle grated Parmesan cheese on top. Line 18 muffin cups with paper bake cups. Set aside. &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;2. In a large bowl, combine flour,baking soda, cinnamon, salt, brown sugar.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;3. Stir in apples, carrots and raisins. &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;4. In a separate bowl, combine pineapple and juice with oil, eggs, vanilla. &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;5. Add pineapple mixture to flour mixture. Stir until just moistened. &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;6. Spoon batter into prepared muffin cups. &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;7. Bake in a 375 degree oven for about 18 minutes (until a wooden toothpick inserted in centers comes out clean.) &lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;8. Cool for 5 minutes. Oil&lt;br /&gt;2 lb. Ground beef&lt;br /&gt;14 oz. Bag of Small Carrots; slivered&lt;br /&gt;14 oz. Celery; diced&lt;br /&gt;48 oz. Tomatoes; canned, diced&lt;br /&gt;2 Cans cooked Red Kidney beans&lt;br /&gt;2 Cans cooked White kidney beans&lt;br /&gt;88 oz. Beef stock&lt;br /&gt;3 tsp. Oregano&lt;br /&gt;2 1/2 tsp. Pepper&lt;br /&gt;5 tsp. Parsley&lt;br /&gt;48 oz. Spaghetti sauce&lt;br /&gt;8 oz. dry pasta Shell macaroni; or other pasta&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;u&gt;Preparation: &lt;/u&gt;&lt;/strong&gt;&lt;br /&gt;Sauté beef in oil in large 10-qt. pot until beef starts to brown. Add carrots, celery and tomatoes and simmer for about 10 minutes. Drain and rinse beans and add to the pot. Also add beef stock, oregano, pepper, spaghetti sauce, noodles and parsley. Preheat oven 325 degrees. Mix cheeses together, blend well, add other ingredients. Pour into spring pan. Bake for 1 hour and 10 minutes. Turn off oven, leave in oven 2 hours. Chill well. Add clove of garlic, tomato paste, red wine and all seasonings. Cover and simmer until beef is tender. Bring to a boil until butter melts.&lt;br /&gt;Lower flame and squeeze lemon juice over cutlets.&lt;br /&gt;Turn over once; simmer for another 15 minutes.&lt;br /&gt;&lt;br /&gt;If you want to thicken broth, put 2 Tablespoons cornstarch in a cup and add a little water to make a paste. Mix with 6 tablespoons sugar and 2 teaspoons cinnamon. Set aside.&lt;br /&gt;&lt;br /&gt;Mix remaining ingredients together well.&lt;br /&gt;&lt;br /&gt;Mix apples to cake batter.&lt;br /&gt;&lt;br /&gt;Pour into a greased 9x13” pan. Add the onions and cook a few minutes.  Cook the noodles, drain and mix with meat and onions.  Add the rest of the ingredients. Round into 2 strips 12”x4” arranging them 3” apart on an ungreased cookie sheet.  Pat out with floured hands.&lt;/span&gt;&lt;br /&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;Mix the 2nd half cup margarine and water in a saucepan.  When boiling, add almond flavoring.  Remove from heat.  Stir in with a wooden spoon 2nd cup flour and salt all at once.&lt;/span&gt;&lt;/p&gt;&lt;p&gt;&lt;span style="font-family:verdana;"&gt;When smooth and thick, add 1 egg at a time beating until smooth after each.  Spread half the mixture over each strip of pastry. Right before it’s brown, put in the onions. Right before onions are almost fully cooked, put in a little bit of the Mexican Chile powder, to taste. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Put the mixture in a big pot and add tomatoes. Crush the tomatoes to let the water within the tomatoes out. Season with garlic salt, to taste. Add in diced red and yellow bell peppers. Let simmer for 35 minutes.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Verdana;"&gt;Put a layer of the mixture in a 9x13 pan. Cover mixture with a layer of corn tortillas. Add another layer of the hamburger mixture and top with shredded cheddar cheese. Take a package of chicken breasts and slice it into bite size pieces. Cook the chicken in a stick of butter then add a cup of Parmesan cheese and a cup of heavy cream (may be substituted with tofu for lower fat).
